🫓 The Litti (The Stuffed Ball)
The Litti is a smoky, roasted dough ball that is both dense and highly nutritious.

The Shell: Made from whole wheat flour (atta), salt, and water. Unlike parathas, the dough is kept quite stiff.

The Stuffing: This is the heart of the dish. It is made of Sattu (roasted gram flour), which is a “superfood” high in protein.

The “Chatpata” Flavors: The sattu is mixed with chopped garlic, ginger, green chilies, kalonji (onion seeds), ajwain, lemon juice, and—most importantly—mustard oil and masala from a mango pickle (achari masala).

Cooking: Traditionally, Littis are roasted over a fire of dried cow dung cakes (upte) or coal, giving them a charred, smoky aroma. Modern versions are baked in ovens or air-fryers.
🍆 The Chokha (The Smoky Mash)
Chokha is the spicy, mashed accompaniment that provides a moist contrast to the dry Litti.

Ingredients: It is a mash of roasted eggplant (baingan), tomatoes, and potatoes.

Preparation: The vegetables are roasted over an open flame until the skin chars. They are then peeled and mashed together.

The Dressing: Raw onions, garlic, green chilies, and coriander are added. The final, essential touch is a drizzle of raw mustard oil, which provides a pungent, sharp kick.
